The following makes 8 servings:

Summer Bean Salad

  • 1 can black beans

  • 1 can pinto beans

  • 1 can garbanzo beans

  • 1 yellow bell pepper

  • 1 tomato

  • 1 red onion

  • 1 avocado

French Dijon Vinaigrette

  • 1 clove garlic

  • 2 tablespoons Dijon mustard

  • 2 tablespoons olive oil

  • Juice from 1 lime

  • 3 mint leaves

1. Combine all bean salad ingredients in a bowl

2. Pull all vinaigrette ingredients in a blender and blend till smooth

3. Mix dressing into bean salad

4. Enjoy!
